Cauliflower Crust Pizza
with a Basil Pesto

Ingredients:

Crust:                                                                                   2 Cups Raw Cauliflower

1/2 Cup Quinoa Flour 

1/2 Cup Almond Flour

2 Tablespoons Nutritional Yeast

1 1/2 teaspoons Dried Oregano                                 

Sea Salt and Pepper to taste                  

EV Olive Oil to Drizzle        

3 Tablespoons Garlic – minced                                       4 Tablespoons Chia Seed
    plus 8 Tablespoons Water to create “gel”

 

Pesto:

2 Cups Basil – packed                              

1/4 Cup EV Olive                     

1/4 Cup Raw Pine Nuts                                     

2 Tablespoons Nutritional Yeast                          

1 Tablespoon Garlic – minced                                

Zest of 1 Lemon


Toppings:                                                                        

2 Tablespoons Sundried Tomato - thinly sliced   

1/2 Cup Portabello Mushrooms - halved and sliced   1/4 cup Red Onion - quartered and sliced thin 

1 Cup Kale - cup into strips

Instructions: 

Preheat Oven to 400*
Begin with crust:  In a small bowl, put Chia seeds and add water – set aside to gel. In a food processor pulse your cauliflower until it creates a “rice-like” consistency.  Place in a large bowl and add quinoa flour, almond flour, nutritional yeast and dried oregano. Mix to combine before folding in the minced garlic and chia seed mixture. Form into a large ball of dough and set aside for five minutes. On a parchment lined baking sheet place dough in center. Flatten and spread out into and even circle 1/2 inch thick. Sprinkle with sea salt and pepper. Drizzle with olive oil before placing in oven for 25 minutes to bake. Add all Pesto ingredients into a food processor and blend until smooth. Spread pesto on cooked crust and layer with your toppings. Drizzle with additional olive oil and sprinkle sea salt. Place back in oven and cook for additional 10 minutes.  Broil for a crispy finish for five minutes before removing from oven! Serve and enjoy – YUM!
